Happy to share another recipe from my book to keep you entertained and healthy during this lock-down.
Did you know that you can make natural straws out of papaya leave stems? Since they are hollow on the inside all you need to do is cut them into straw-size pieces. How cool is that? The leaves are also edible and often used to make juice. And have you ever tasted the seeds? They taste exactly like watercress. I often use them as a garnish on a green papaya salad or for one of my fancy Chef’s Table dishes.
PAPAYA, MANGO & PARCHITA SMOOTHIE
1 cup (225g) ripe papaya, peeled and roughly chopped
1 cup (175g) mango, peeled and roughly chopped
¼ cup (60g) parchita (passion fruit) pulp
1 tablespoon fresh lime juice
Put all ingredients in a blender and process for 1-2 minutes until smooth and creamy. Serve immediately.
