The mango season is around the corner, which means: mango jam. Soon the trees will be filled again with sweet, juicy mangoes, and lot’s of them. Let’s make sure we won’t let any go to waste. Cook with them, freeze them or give them to your neighbour. Or me.
This recipe for mango jam is simple to make and you don’t need many ingredients. Just water, sugar and lime. If you have lots of mangoes, make lots of jam. Use old jam jars to store it and it will hardly cost you anything. Share it with your neighbors or whoever needs it. Or sell it and earn some money. Stay healthy, stay creative!

Mango jam
Makes 4 cups (1 liter)
4 cups (750g) mango, peeled and roughly chopped
2 cups (450g) granulated sugar
1 tablespoon water
2 tablespoons lime juice
1 tablespoon lime zest
Put all ingredients in a saucepan and bring to a boil. Reduce the heat and simmer for 15 minutes while stirring occasionally. Let cool and process into a smooth jam with a handheld blender or in food processor. Store in a used jam jar or airtight container.
