Happy to share another recipe for a papaya-mango and parchita smoothie from my book to keep you entertained and healthy. Both papaya, mango and parchita are popular fruits on the island of Curaçao. When blended all together you’ll end up with a creamy and refreshing smoothie that is packed with fibres and anti-oxidants.

Did you know that you can make natural straws out of papaya leaf stems? Since they are hollow on the inside all you need to do is cut them into straw-size pieces. How cool is that? The leaves are also edible and often used to make juice. And have you ever tasted the seeds? They taste exactly like watercress. I often use them as a garnish on a green papaya salad or for one of my fancy Chef’s Table dishes.

Papaya, Mango & Parchita Smoothie

Ingredients

1 cup (225g) ripe papaya, peeled and roughly chopped

1 cup (175g) mango, peeled and roughly chopped

¼ cup (60g) parchita (passion fruit) pulp

1 tablespoon fresh lime juice

 

Preperation

Put all ingredients in a blender and process for 1-2 minutes until smooth and creamy. Serve immediately.
